Caramelized Onion Dip

A delicious caramelized onion dip is rich, creamy, and packed with sweet and savory flavors. The caramelized onions bring a deep, sweet flavor that is complemented by the creamy base of sour cream or cream cheese. The dip is typically seasoned with garlic, herbs, and a touch of balsamic vinegar for added depth and complexity. It is perfect for dipping with crunchy vegetables, chips, or bread, and is sure to be a hit at any party or gathering!



Ingredients:

  • 2 large onions, finely diced

  • 2 tablespoons olive oil

  • 1 tablespoon vegan butter

  • 1 tsp balsamic vinegar

  • 1 tsp brown sugar (or coconut sugar)

  • 200 g tub of vegan cream cheese

  • 2 tablespoons vegan mayo

  • 2 garlic cloves

  • 2 pickles, finely diced

  • Fresh chives, chopped

  • Juice from 1/2 a lemon

  • Paprika for sprinkling on top

  • Salt and pepper to taste

  • Chopped fresh chives for garnish (optional)

  • Parsley for garnish (optional)


Instructions:

  1. Caramelize the Onions:

  • Heat olive oil and vegan butter in a large skillet over medium-low heat.

  • Add the diced onions and cook slowly, stirring occasionally, until they are deep golden brown and caramelized, about 30-40 minutes.

  • Stir in the brown sugar and balsamic vinegar during the last 5 minutes of cooking to enhance the caramelization.

  • Once caramelized, remove from heat and let cool slightly.

  1. Prepare the Dip:

  • In a mixing bowl, combine the vegan cream cheese, vegan mayonnaise, minced garlic, pickles, chives, and lemon juice.

  • Add the caramelized onions to the mixture and stir until well combined.

  • Top with olive oil, paprika, fresh chives, and parsley

  • Season with salt and pepper to taste.
