Ingredients:

  • 1 cup dry green or brown lentils, rinsed and drained

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 bell pepper, diced

  • 1 can (14 oz) diced tomatoes

  • 6 cups vegetable broth

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon dried thyme

  • Salt and pepper, to taste

  • 2 cups chopped kale or spinach

  • Fresh lemon juice, for serving

  • Fresh parsley or cilantro, chopped, for garnish (optional)


Instructions:

  1. Sauté Vegetables:

  • In a large pot, heat a little bit of oil over medium heat. Add chopped onion, garlic, carrots, celery, and bell pepper. Sauté for about 5 minutes until the vegetables are softened.

  1. Add Lentils and Spices:

  • Add rinsed lentils to the pot along with ground cumin, paprika, dried thyme, salt, and pepper. Stir well to combine.

  1. Add Liquid:

  • Pour in diced tomatoes (with their juices), vegetable broth, and water. Stir to combine everything. Bring the soup to a boil.

  1. Simmer:

  • Once boiling, reduce the heat to low and let the soup simmer for about 25-30 minutes until the lentils are tender.

  1. Add Greens:

  • Stir in chopped kale or spinach and cook for an additional 5 minutes until the greens are wilted and tender.

  1. Adjust Seasoning and Serve:

  • Taste the soup and adjust seasoning with more salt and pepper if needed. Squeeze in some fresh lemon juice for brightness.

  1. Garnish and Serve:

  • Ladle the soup into bowls and garnish with chopped parsley or cilantro if desired.
